For generations, the salt farmers of the Colima coast have read the wind, the sun, and the tide with a knowledge that cannot be learned in a classroom.

They wade into the shallows before sunrise. They work with wooden tools designed centuries ago. They know, without instruments, when the crystals are ready and when to wait.
